“Italian Cookbook For Quantity Service By Caleva” cookbook subtitled “Authentic Professional Recipes.” Published by Ahrens Publishing Company, Inc., New York, in 1956, it is a first edition. The cookbook is a hard cover measuring 6 x 9¼ inches with 448 pages, it is in very good gently used condition with some chipping at the corners, flipping through the pages are clean and unmarked.
The author trained in Italy with the chef who was chef de cuisine of the Royal Household of Italy. The recipes in the book are all authentic Italian recipes, not Americanized. They are given in serving sizes for 25, with instructions on how to make for 50 or 100, or even 20 servings and under.
